Applesauce-Oatmeal Cookies

A special treat for Valentine’s Day tomorrow….. Patients who visited the office this evening got a chance to sample these healthy and delicious  cookies warm right out of the oven!

1  1/2 cups of rolled oats

1  1/2 cups of whole wheat pastry flour or Bob’s Red Mill Gluten-free baking mix

1 teaspoon baking powder

1/4 teaspoon baking soda

1/2 teaspoon sea salt

1  1/2 teaspoons cinnamon

1/2 cup raisins or fruit-juice sweetened cranberries

1/2 cup chocolate or carob chips (we use Lily’s brand stevia-sweetened chips)

1 cup finely chopped, peeled apple

1/2 cup of applesauce

1/2 cup of honey or maple syrup

1/3 cup of almond milk

Preheat the oven to 375 degrees. Combine all the ingredients in a large bowl and mix well. Drop onto a greased baking sheet, using a rounded teaspoon of dough for each cookie. Use a fork to slightly flatten the cookies. Bake for about 12 minutes or until golden. Experiment with different additions such as seeds, chopped nuts, dried fruits, pears instead of apple, etc.
